We want your meat processed just the way you like it. That’s why we ask every customer to fill out a cut sheet for each animal whether it’s a cow, pig, lamb or goat. These simple forms tell our butchers exactly how to cut, wrap and package your order. You can either download a printable PDF to fill out by hand or submit your instructions online through a secure form that goes straight to our team. Just pick whichever option’s easiest for you below.
Understanding Our Processing Prices & Cuts
At Brick Church Meats & More, we believe in keeping things transparent, straightforward and fair – especially when it comes to processing your animals. Whether you’re a seasoned producer or dropping off your first steer, we want you to feel informed and confident in every part of the process.
We offer custom and USDA-inspected harvest services for beef, pork, lamb and goat, all processed right here in our state-of-the-art facility in Giles County, Tennessee. Below, we’ll walk you through what goes into our pricing and what you can expect when you bring your animals to us.
Beef Processing
For beef, you can choose between custom harvest ($50 per head) or USDA harvest ($100 per head), depending on whether the meat is for personal use or for resale.

Processing Fee: $1.25 per pound based on hanging weight

Rollstock Packaging: $1.55/lb for vacuum-sealed cuts that are freezer-ready

Patties: $1.65/lb if you’d like your ground beef portioned and packed as burger patties

Older Animals: Cattle over 30 months will incur a $50 disposal fee due to federal requirements

Extended Hang Time: We offer a standard hang time, but if you want your beef to age longer (over 14 days), it’s $5 per day

Labeling Setup: If you’re selling retail and need labels, there’s a one-time $100 setup fee

Pork pricing starts at just $30 for custom harvest and $60 for USDA harvest.
