Beef Cuts Explained

Chuck & Neck
This hardworking area yields flavorful cuts perfect for slow cooking. Think chuck roasts, stew meat, and pot roast. Great for comfort food lovers!

Rib
Home to some of the most prized cuts like ribeye and prime rib. Richly marbled and tender, these are ideal for grilling or roasting.

 Brisket
A tougher cut that transforms into melt-in-your-mouth perfection when smoked, braised, or slow-cooked. Great for BBQ or hearty stews.

Front Shank
Full of connective tissue, the shank is best used in soups or for making bone broth and osso buco-style dishes.

Plate
This cut includes short ribs and skirt steak. It’s full of flavor and perfect for fajitas or marinating and grilling.

Flank
Lean and flavorful, flank steak is best when marinated and grilled, then sliced thin against the grain.

Short Loin
This is where you’ll find premium cuts like T-bone and porterhouse steaks. Tender and delicious for grilling or pan searing.

Top Loin
Also known as strip steak or New York strip, this cut is tender, juicy, and perfect for quick cooking.

Tenderloin
The most tender cut of all. Filet mignon comes from this section. Ideal for special occasions or when you want something extra indulgent.

Sirloin

Rump Cap

Round

Back Shank
Similar to the front shank, it’s best suited for slow cooking to release its rich flavor and create hearty dishes.
