It’s the final step in a lot of hard work, care and time. At Brick Church Meats & More, we treat that responsibility with the respect it deserves. Our goal is to make the experience smooth, transparent, and worth every ounce.

Here’s what you can expect when you bring your animals to us for processing.

Step 1: Choose Between Custom or USDA Processing

We offer two types of harvest:

  • Custom Processing – Perfect for meat that’s going into your own freezer. It’s processed just how you like it, but not for resale.

  • USDA-Inspected Processing – Required if you plan to sell your meat to others (farmers markets, stores, or direct to consumer). This includes a USDA inspector on-site and ensures your product is labeled and approved for public sale.

We’ll help you choose the best option for your needs and walk you through every detail.

Step 2: Fill Out Your Cut Sheet

To make sure your meat is processed just how you like it, we’ll ask you to complete a cut sheet for each animal. This form tells our butchers things like how thick you want your steaks, what kind of roasts you prefer, and whether you want patties or ground meat.

You can fill it out in two ways:

  • Download a PDF and bring it with you

  • Submit a secure online form that goes straight to our team

Every species has its own form so we can give each animal the attention it deserves.

Step 3: Drop-Off and Harvest

Our facility is located just minutes off I-65 (Exit 22), making drop-off easy and convenient. When you arrive, we’ll check in your animals and confirm your processing instructions.

Harvest happens right here in our state-of-the-art, 12,000-square-foot processing facility, and we follow strict cleanliness and handling protocols to ensure everything is done right from start to finish.

Step 4: Butchering, Packaging & Optional Extras

Once the animal is harvested, it will hang for a designated period (typically 10–14 days for beef). We’ll then follow your cut sheet to break down the carcass into your preferred cuts.

Here’s where the details matter:

  • Vacuum-sealed packaging (rollstock) helps your meat stay fresher, longer

  • Patties available for beef and pork

  • Bacon processing available for custom pork orders

  • USDA options come with custom retail labeling, so you’re ready to sell

Need your beef to hang longer for extra tenderness? We offer extended hang times for a small daily fee.

Step 5: Pickup & Enjoy

We’ll contact you when your order is ready for pickup. Everything will be boxed, labeled and frozen, ready to go. Our staff is happy to help you load your vehicle and answer any last-minute questions about storing or preparing your meat.
